From 40-year-old vines, subjected to a native-yeast fermentation incorporating whole grape clusters. It is aged in large, old foudre casks. Light ruby-purple in color and slightly cloudy, with aromas/flavors of raspberries, wild strawberry, currants, lilac, violet, pepper, underbrush, and leather. Juicy and gently tannic, but with a tangy crunch and an aromatic, lightly smoky finish. Pairs wonderfully with salmon teriyaki.

100% Pinot Noir. From fifth-generation Girards' 14 hectares of vines spread over five communes with three distinct terroirs: gravel soils (caillottes), flint (silex) and heavy clay (grosses terres). The Girards farm sustainably and harvest the steepest slopes by hand. The Pinot Noir is destemmed, pressed, cold-macerated for 7 days and fermented in tank with native yeasts. The wine is aged in stainless steel for a year.

Neither glitzy nor flashy, but perfectly embodies the region’s rural soul.  A signature blend of 50% Merlot with equal parts Cabernet Franc and Cabernet Sauvignon, even at its modest price point it possesses much of the dark-fruited complexity that made Bordeaux famous in the first place – but rendered in a brighter, more refreshing frame. Organic. Ample red cherry and raspberry fruit on the nose, touches of sous-bois (forest floor) and tobacco emerging with aeration. The palate is soft and fleshy, a fine bead of acidity, gaining depth towards the finish with a touch of black pepper lingering on the aftertaste. Lovely intense purplish ruby colour with dark tints. It has an amazingly complex nose with aromas of black fruit that are dominated by blackberry and raspberry. It has a pleasant grilled flavour, is very round and rich, and is remarkably balanced overall with elegant, mellow tannin. It has an equally appealing, long finish.

Organic. This Beaujolais Nouveau comes from the hamlet of Saint-Jean d'Ardières, just outside of Morgon, where the terroir turns from granite to clay and limestone. It shows gorgeous purity and lift that comes from the organically farmed old-vine Gamay. The beautiful terroir shines through with clear definition and racy floral deliciousness.

Poulsard is an indigenous, a very thin-skinned grape that makes very light-colored wine which could fool you into believing that there won’t be any tannins, but they are sneaky, with a delayed and building presentation. Redcurrant and cherry, with a hint of hibiscus on the nose. Light and precise, with cherry complemented by floral and spice flavors. Delightful and lively. Pair this with poultry or pork and avoid fish.
